Ingredients:
6 large potatoes
3 eggs
1 onion
3 Tablespoons of Matza meal (or flour)
1 teaspoon of salt
2 Tablespoons of lemon juice (optional)
pinch of pepper (optional)
vegetable oil
Equipment:
frying pan
large mixing bowl
grater
mixing spoon
measuring spoons
spatula

To do:
1. Grate potatoes and onion into bowl
2. Mix in lemon juice to prevent discoloration of potatoes
3. Drain liquid
4. Add eggs, matza meal, salt, and pepper
5. Mix all together
6. Fill frying pan with a half an inch of vegetable oil
7. Put large spoonfuls of mixture on to frying pan
8. Flatten mixture on pan with spatula
9. Put on stove at medium heat
10. Fry until brown around edges
11. Flip over with spatula
12. Fry until completely brown
13. Take latkes off pan with spatula and put on plate with a stack of 3 or 4 paper towels
14. Cover latkes with more paper towels
15. Repeat steps 13 and 14 until all latkes are covered
