Autumn Recipies

Autumn is my favorite season! The colors of the leaves are beautiful, but the best part about autumn is the delicious, comforting food. Here are some great recipies that are yummy and easy for kids to make.

- Buffalo Chicken Wrap -
Total Time : 30 min.
Makes : 4 wraps

8 frozen breaded chicken breast strips ( about 3/4 lb)
1/4 cup KRAFT Mayo Real Mayonnaise
1 tbsp. hot pepper sauce
2 cups shredded lettuce
4 flour tortillas ( 8 inch. )
1 large tomato, chopped
1 cup KRAFT Shredded Cheddar Cheese

BAKE chicken as directed on package. Meanwhile, combine mayo and hot pepper sauce until blended. PLACE lettuce evenly with chicken, tomatoes and cheese. DRIZZLE with the Mayo mixture. Fold in both sides of each tortilla to enclose filling.

- Hearty Vegetable Soup -
Prep Time: 10 min.
Total Time:1 hr 10 min
Makes: 12 cups

3 Tbsp. oil
1-1/2 cups chopped onions
1-1/2 cups chopped carrots
1-1/2 cups chopped celery
2 cups cubed unpeeled potatos
5 cans (14-1/2 oz. each) low sodium beef broth
1 pkg. (15 oz.) marinara sauce
Dash of dried thyme leaves
Dash each of salt and ground black pepper

HEAT oil in large stock pot. Add onions,carrots and celery;cook 5 min. oor until crisp-tender,stirring occasionally. ADD remaining ingredients;stir. Simmer 30 to 40 min. or until potatoes are tender, stirring occasionally.

- Pecan Snickerdoodles -
Prep time:20 min.
Total Time:32 min.
Makes:6 dozen cookies

2-1/2 cups flour
1 cup finely chopped PLANTERS Pecans
2 tsp. baking soda
1/2 tsp. salt
2 sticks butter or margarine, slightly softened
1-3/4 cup sugar, divided
2 eggs
1 tsp. ground cinnamon

Preheat oven to 375 F. Mix flour, pecans, cream of tartar, baking soda, and salt in large bowl; set aside.

Beat butter and 1-1/2 cups of sugar in large bowl with electric mixer on medium speed until light and fluffy. Add eggs; beat until well blended. Add dry ingredients; beat on low speed until well mixed. Form dough into 1-inch balls. Mix remaining 1/4 cup sugar and cinnamon. Roll balls in cinnamon sugar. Place 2 inches apart on baking sheet.

Bake 10 to 12 minutes or until lightly browned. Cool on baking sheets for 1 minute. Remove to wire racks; cool completely.
