Carrot Cake!

Don't you just LOVE cake? Normally, when you eat cake, you may feel a bit guilty, but now there's a cake that's healthy and delicious!

Makes 10 servings
Ingredients:

1/3 of a cup of oil
2 eggs
1 Tbsp. hot water
1/2 cup grated raw carrots
3/4 cup flour
3/4 cup sugar
1/2 tsp. baking powder
1/8 tsp. salt
a pinch of cinnamon

Preheat oven to 375 degrees
1. In a bowl mix oil, eggs, and water.
2. Add carrots.
3. Stir together in a different bowl flour, sugar, baking powder and cinnamon. Then add it to the carrot mixure.
4. Then if you want, add nuts or raisins.
5. Then, pour the mixure into a greased cake pan and bake for about 20 minutes, maybe longer.

And there you have it, a scrumptious carrot cake!
